I made this version during my lunch break today to take to a dinner meeting this evening, so you know it was quick and easy! I used one box of shell pasta and cut up a cucumber, two small tomatoes and 1/2 of a large vidalia onion then mixed together light mayonnaise (you could also use plain yogurt), red wine vinegar, salt & pepper for a dressing.
It tastes like summer! (And my kids are hoping for leftovers!)
