One Pot Dinner

Who has time to wash a lot of dishes? I know we don't. I try to use as few pots & pans as possible when making dinner, so we end up eating a lot of one pot dinners where everything is mixed up together.

Last night's dinner was...hmmm...I don't really have a name for it! Here's the recipe:

1 lb. lean ground beef (I try to buy 93% when it is on sale and stock up, or I grind my own) - brown and drain any excess fat
1 pack Uncle Ben's Whole Grain Medley Vegetable Harvest
1 bag Steamfresh Rice & Mixed Veggies
1 small can tomato sauce
Whatever seasonings you want (last night, I used chili powder, onion powder, salt and pepper)















Ok, so it doesn't look pretty. But, the whole meal takes about 15 minutes and is healthy and easy! Cheap too - about $5 for a meal for 4. And, the kids gobble it up!

  1. We use steamfresh veggies and/or rice quite a bit, but I hadn't been to their website. Thanks for pointing me there - there are some great recipes that use their products!

  2. I recommend cooking up a big pot of white rice on the weekend and putting in fridge for the week. Using it for recipes such as this are even cheaper than the Uncle Ben's AND MUCH LESS SODIUM!

  3. I agree that is a good idea Senecca, except I'd recommend brown rice instead of white. :)

    The Uncle Ben's probably does have too much sodium, but it also has the extras of lentils and such mixed in.

  4. Senecca, does the rice get hard before it's all used up? Whenever I've saved rice (from Chinese restaurants) it always seems to get very hard in just one day.
