Chicken salad, part II

I made enough chicken salad this week to last a few days, so I "reformatted" it to make it a little different for another day of lunch. Instead of a pita, I served this straight up with some whole wheat crackers on the side (not pictured). I also packed cucumber slices drizzled with vinegar and a 100 calorie cheese cube pack. Not to mention a Clif Kid Twisted Fruit for a fun snack and a V8 low sodium can to drink. It is easy to make a main dish one time and switch it up the next day to make it brand new again!
