Avocado Chicken Salad
Leftover chicken breasts, shredded (2 breasts should be about right)
1 avocado, diced
1 tomato, diced
Red onion (to taste), diced
Lime juice, onion powder, chili powder, salt & pepper - all to taste
Mix together well - it is ok if the avocado gets mashed up, it serves as the mayo you're not adding. Do not omit the lime juice - it keeps the avocados from browning.
My family seems to prefer this version, and I serve it frequently for guests as well.
